The Farmer's Wife: Food is topic of discussion

A bit of news regarding the Queen, since I did mention her lately. She was introduced to a fellow who sells solar panels, and lo and behold, he later had an order to put some on her castle at Balmoral, in Scotland!  

When I think of veterinarians, which I was last week, I often remember “Doc” Ditman, that cheery fellow in Winside who helped us out on more than one occasion.  I made a chicken and rice casserole from the Winside Centennial cook book offered by Irene. It was good, and made a large pan full, guaranteeing me several lunches of left overs.  That's the kind of recipe I like. 

After that, I made ham balls from Dottie Wacker, using the ham left from Christmas. I've belabored the point about not being able to buy ham loaf in this spot quite enough, but this time, I got out the grinder Mike's Mom used and ground my own ham. They turned out very good, thank you.  

We ate them the weekend of the 22nd, when the twins finally arrived for their Christmas visit; their parents came, too, but it was the twins we were after. Let me just say, they are very busy!  

We also had a DQ cake because it was Jaxson's birthday. He is a busy sophomore at Concordia and paid us another visit last night, when we ate creamy enchiladas. One thing about having him here,  you can about guarantee the food will be gone, or if it isn't, it will be a nice bit to take back home to his roommates.  

I actually got out of bed and hustled on Sunday morning and made it to 8 a.m. church! I think there were some folks there who almost fainted when I walked in. My mom's old friend, Leona, was observing a 90th birthday at the coffee hour between services, and I felt duty bound to be there for that.  

As I admitted to them, I've gotten very lazy with the 10:30 service on YouTube. It's so easy to stay in pajamas, have a second cup of coffee, and sit in front of the computer. It's also a bad habit that it's time to break! Most of us still wear masks, and take proper precautions. And I also admit it almost seems inevitable for us all to get the darned virus, now that Omicron is among us.  

Would you believe it froze in Orlando on Saturday night, and it got to 58 here on Sunday? AND, after leading 21 to 3, the Chiefs were beaten by 3! You just never know, on any given day, anything can happen. Go, Bengals!!
